Crockpot Red beans and rice (photos to come) Amethyst spin

Cooking instructions

* Step 1

Pour a glass of wine or favorite beverage because cooking is more fun that’s why!

* Step 2

Chop sausage into small slices and season with garlic and seasonings. Place I’m baking sheet and bake covered about 20 min so juices collect

* Step 3

While sausage is baking, dice onion, green pepper and celery together and combine in crockpot with rinsed beans.

* Step 4

Toss sausage with juices in the pot and stir. Add ham or neck bone and Tasso (optional)

* Step 5

Then add water and chicken broth or just water just till you see it about level with the beans

* Step 6

Cover and cook on high for 6 hours (stirring every hour or two). After about 6 hours you can drop heat to low and cook another hour or two. You want the beans to soften and start thickening the juices when stirring.

* Step 7

Season more if desired. Add in parsley and stir. serve over rice and enjoy!
