Shakshuka
Cooking instructions
* Step 1
Warm some olive oil in a large pan or skillet. Add chopped onion, diced bell pepper and a pinch of salt. Cook, stirring often, for about 5 minutes.
* Step 2
Add pressed (or minced) garlic, tomato paste and spices. Cook, stirring constantly, for 2 more minutes.
* Step 3
Pour in the canned chopped tomatoes together with their juices. When the mixture starts simmering, reduce the heat slightly and cook for about 5 more minutes.
* Step 4
Make a hole using a spoon and crack the egg directly into it. Spoon a bit of the tomato mixture over the whites to help contain the egg. Repeat with the remaining eggs.
* Step 5
Cook until the eggs are ready, which will take about 7 minutes. Take of the stove, top with crumbled feta and chopped parsley. Serve with fresh bread.
