Keto Cheesy Stuffed Mushrooms
I just love stuffed mushrooms, but didn't want to overload on carbs during this particular low carb week, so I decided to use pork rinds instead of bread crumbs... And it worked like a charm!
Cooking instructions
* Step 1
Remove stems and finely chop stems from white button mushrooms.
* Step 2
Place about 15 spicy pork rinds in a large partially sealed ziplock bag, and crush with rolling pin.
* Step 3
In a bowl mix together chopped stems, 1/2 cup mozzarella cheese, 1/2 cup crushed pork rinds, seasoning, and one egg (mix well).
* Step 4
Stuff mushroom/cheese mixture into mushroom caps.
* Step 5
Bake on a cookie sheet at 350°F for 25 minutes, and Remove from oven (pour off any excess liquid).
* Step 6
Use the remaining 1/2 cup mozzarella cheese to top mushrooms.
* Step 7
Place back in over and bake for another 5 - 10 min or until golden brown.
