Maque Choux (Cajun Corn)
Maque Choux is a Cajun corn dish. Easy to make, colorful, and slightly spicy. Best made with fresh corn, but you can use frozen corn as I did this time.

Cooking instructions
* Step 1
Add bacon to a large skillet. On medium high heat cook the bacon until crispy.
* Step 2
Add corn, onion, bell pepper, jalapeño, Cajun seasoning, salt, and black pepper. Cook for 10 minutes while covered. Stir frequently. You want to start to see the onions and corn start to caramelize.
* Step 3
Add chicken broth. Stir for 2 minutes. Add cream and simmer for 5 minutes. Stir occasionally. Taste and adjust for salt, black pepper, or Cajun seasoning.
* Step 4
Transfer to a serving dish. Consider sprinkling some grated parmesan cheese on top when serving. Enjoy!
