Crispy Roasted Diced Swede

No one in the family was thrilled about having swede with our roast chicken last night. BUT in a total win, this side dish ended up as the unexpected star of the show! You need to dice it nice and small and look after it during roasting but turning regularly throughout. (I cheated and bought the swede ready diced)

Ingredient

Food ration :

2-3 servings
2 tbsp

olive oil

Cooking instructions

* Step 1

Lay the veg out on a good baking tray. Pour over the oil then mix it all well and scatter the seasoning over everything.

* Step 2

Roast at 200 C for about 35-45 minutes. Give it all a good stir every 15 minutes to stop the veg sticking to the tray.

* Step 3

Once it’s all crispy and golden looking, season with sea salt before serving.
