One Pot Herby Chicken & Butternut Squash Casserole 🧡
A really clean and fresh midweek dinner which we really enjoyed last night. The squash bakes in the juices of the chicken so that it is full of flavour and very tender. It also reheats very well for #leftovers
Cooking instructions
* Step 1
Peel, deseed and then thinly slice the squash. Layer it on the bottom of a large baking dish. Add the onions on top.
* Step 2
Then mix together the oil, honey, vinegar and rosemary in a small bowl and spoon this mix over the vegetables.
* Step 3
Arrange the chicken on the top and season again with salt and pepper and another good drizzle of oil.
* Step 4
Bake for 50-60 mins at 190 C or until the chicken is golden and the juices run clear.
