Chicken & Tomato Curry

Chicken & Tomato Curry

This curry was inspired by a Dahi curry recipe I found on Cookpad. This version is #dairyfree. The use of fresh tomatoes really makes a difference here.

Ingredient

Food ration :

6 servings
2 tsp

salt

1 tbsp

cumin

1 1/2 tsp

turmeric

1 tbsp

coconut oil

350 mls

water

Cooking instructions

* Step 1

Mix all of the dry spices and salt in a small bowl.

Gently fry the onion in the coconut oil for 5 mins. Then add the garlic and ginger paste and the spices. Continue to fry gently for another 10 minutes.

* Step 3

Add the chicken, stir to coat in spice, then add the water and simmer gently.

* Step 4

While the curry is simmering, blitz your tomatoes in a food processor or blender until roughly blitzed. Then add the tomatoes to your curry.

* Step 5

Simmer for 40 minutes then serve with fresh coriander and rice.
