Chicken and Squash Guyanese Curry
Healthy squash, veggie and chicken dish, perfect hot on cooler days and room temp in the summer. Packed with nutrition, carb free.

* Step 1
Chop and marinate chicken overnight in green herbs and garlic.
* Step 2
Bloom the spices in oil in a large frying pan. Add the chicken and brown, cooking through. Set aside.
* Step 3
Add the veggies to the pan (except squash). Sautéed until tomatoes are soft
* Step 5
Combine with chicken and let stew until squash is desired texture and most of the liquid has evaporated
