Cooking instructions

* Step 1

Boil potatoes,mung beans& dates in cooker,(dates wash 6–7 times), prepare spicy green chutney.In a mixture jar add mint & coriander leaves,green garlic ginger chili paste,fennel seeds,salt,blend it upto smooth paste.

* Step 2

Strain the green mixture in a bowl add all dry masala,mix nicely,add water,adjust consistency it should be watery.

* Step 3

For amchur & dates sweet chutney. wash & soak dates for 5 to 10 minutes then remove seeds,boil dates,crush boiled dates,strain in a bowl,add water,add amchur powder,jeggery,black salt,salt,roasted cumin powder,fennel seeds powder,red chili powder,mix properly.(I forgot to take pictures of sweet chutney)

* Step 4

Fry puri on low medium flame.

* Step 5

For stuffing add black salt, salt,red chili powder in boiled mashed potatoes,& boiled mung beans mix well.chopped onion,

* Step 6

Crack up top portion of puri with fingers,add stuffing,onion,bundi,sev,add both water serve immediately and enjoy.
