Sirloin and Black Bean Burrito

This dish can also be served for supper. Here a leaf of Romaine lettuce takes the place of a traditional flour tortilla, transforming a high Glycal meal to a low Glycal one. A serving is 2 burritos.

Cooking instructions

* Step 1

In a small skillet over low heat, mix the garlic and salt into the black beans.

* Step 2

Select 8 of the best large outer leaves from a head of Romaine lettuce. Clean and set on a work surface.

* Step 3

Place a few slices of steak on each leaf of Romaine. Top the steak with a portion of beans, cheese, guacamole and salsa. Roll as if making a burrito with a flour tortilla. Serve 2 per person with extra salsa on the side.
