Potato and leek soup 🍲

Made with new potatoes, baby potatoes with skin on, rather than cream I only add semi skimmed milk for a creamier taste. With homemade croutons from a baguette πŸ₯–. #GlobalApron

Cooking instructions

* Step 1

Cooking on induction hob. Wash a chop potatoes into small chunks, wash leeks and strip the thick outer layers away and slice the rest.

* Step 2

Get a pan of water onto the hob and add the veg and start boiling.

Add the stock and salt and pepper. Put lid on and let to simmer until soft, keep an eye on it by stirring.

* Step 4

Add some milk into pan. Make a little thickener up with cornflour and milk and add to the pan.

Now you can have it where the veg is visible and chunky, if you like it smooth blitz it until smooth. Wait until the pan is cool then blitz.

Serve with croutons and crusty bun. Croutons are just chopped baguette into cubes sprayed and seasoned and put in airfyer for 10 minutes.
