Xmas Mince Pies
A mince pie is a sweet pie of English origin filled with mincemeat, being a mixture of fruit, spices and suet. The pies are traditionally served during the Christmas season in much of the English-speaking world.

Cooking instructions
* Step 1
Preheat the oven to 180 degrees C.
Lightly toast the pecans in a frying pan for a couple of minutes until darker in colour and aromatic. Finely chop the dried cranberries, apricots and citrus peel. Chop the pecans. Add the fruit and nuts to the mincemeat along with the angostura bitters, white pepper, mixed spice, nutmeg, citrus zest and the whisky. Mix well.
* Step 2
Brush the fairy cake or muffin tin with butter. Roll out the pastry and using a fluted circular 98mm (3 7/8ths) cutter stamp out pastry circles and line each hole. Pack the pastry cases with mincemeat.
* Step 3
To make the frangipane beat the butter and sugar together then add the egg then the ground almonds. Pipe on top of each mince pie.
* Step 4
Place in the oven for 25-30 minutes until golden brown. Remove from the oven and leave in the tin for 10 minutes before turning out onto a wire rack.
* Step 5
Whilst the mince pies are cooling, place the jam and aquavit in a small pan and heat until bubbling. Brush the pies with the glaze and serve warm.
