#ATW3 #Thechefstory #week3 an extremely simple south Indian mix veg kurma or curry. made with a combination of veggies. it is a simple multipurpose curry recipe that can be easily served on a range of Indian bread, but also the choice of rice and pulao ... the recipe is prepared using the veg mix curry masala mixed directly to the coconut grate, but can also be prepared with any brand of masala

Cooking instructions

* Step 1

Firstly, to prepare the masala paste, in a mixer jar take ΒΎ cup coconut, 2 tbsp cashew, and 2 tbsp vegetable masala.

Grind to smooth paste adding Β½ cup water. keep aside.

In a large Kadai heat 2 tbsp oil, add 1 tsp cumin, 1 tsp mustard, and a few curry leaves.

* Step 4

Splutter the tempering. now add 1 onion, and 1 tsp ginger garlic paste and saute until golden brown.

Further, add 2 tomatoes and saute until they turn soft and mushy.

* Step 6

Add 1 potato, 1 carrot, Β½ capsicum, 5 beans, 2 tbsp peas, and 2 tbsp sweet corn.

* Step 7

Also, add Β½ tsp salt and saute for 2 minutes or until the vegetables are well combined.

* Step 8

Add in the prepared masala paste and cook for 2 minutes or until the raw flavour is gone.

Further, add 2 cup of water and mix well adjusting the consistency.

* Step 10

Cover and boil for 10 minutes or until the vegetables are cooked well.

Add 2 tbsp coriander and mix adjusting the consistency.

* Step 12

Finally, enjoy mix veg curry with roti or rice.
