Sausage and sweet potato bake
We had our first barbeque of lockdown a couple of weeks and, typically, cooked too many sausages! So, this was a recipe to use up lots of leftovers and sad looking veg! Pimped up with some feta and mozzarella, what's not to love!

Ingredient
Food ration :
2 as a main or 4 as a side dish
Cooking time :
1 and a half hours
Cooking instructions
* Step 1
Put all the chopped veg into a large ovenproof dish.
* Step 2
Add the oil, vinegar, herbs and honey /sugar and coat the veg well.
* Step 3
Add the chopped sausages and mix into the veg
* Step 4
Cover the dish with foil and cook for an hour on 180°c
* Step 5
Remove from the oven and stir well. Add your chickpeas and feta and stir again
* Step 6
Return to the oven for 20 minutes without the foil.
* Step 7
Serve in warm bowls with some crusty bread
