3 in one batter for idli, uttapam and appe

This is a versatile batter. This ratio of batter, made with mixed dal and idli rava, can be used to make idlis, uttapam and appe. The mixed dal used herein, not only adds nutritional value, but it also gives nice taste. This batter gives a superb variation from the usual. Cooking instructions

* Step 1

Start by soaking mixed dal and idli rava separately in water. Soak for at least 5-6 hours.

Then next soak chiwda in water. Next wash and strain the dal and rava.

Next in a grinder jar, put the mixed dal and grind coarsely. Next add the soaked chiwda. Grind using minimum water.

Make a smooth batter. Next in a large mixing bowl put strained idli rava. Add into it, the prepared dal and rava batter.

Mix nicely. Now batter is ready to be kept for overnight natural fermentation. Keep it covered in a warm place.

Next day find a nicely fermented batter. Add salt. Mix gently. Next keep the steamer ready and hot. Grease an idli plate with oil/ ghee. Pour batter into the cavities. Put this for steaming at slow heat. Check after 12 minutes. Check if done ok, else steam till done. As it's done take out to cool down. Then scoop out.soft spongy idlis.

Next for uttapam, heat a conditioned tawa. Pour in ladle full of batter. Put chopped onion and grated carrot. Brush oil. Cover and cook till golden from one side. Flip and roast the other side too. Uttapam is ready!

Another way of making uttapam is by using the batter mixture made for appe.

Next for making mixed dal appe, prepare tempering with above-mentioned ingredients. Next into the batter, add chopped onion, grated carrot, chopped green chillies, grated ginger and tempering. Mix well.

Now brush the appe pan with oil/ ghee. Heat it in slow heat. Now pour in the prepared appe batter. Cover and cook till it's golden brown from one side.

Carefully flip and cook the other side too till it's nicely golden and crispy. Take out to serve..
