Hummus With Anchovies, Pine Nuts & Shallots

This is a combination that I put together one day whilst experimenting in my kitchen and it just worked. Salty anchovies, sweet shallots, fresh parsley and nutty toasted pine nuts sit on a bed of silky smooth hummus. I love to make my own hummus from scratch as it tastes so fresh, then I enjoy topping it with little morsels such as this to elevate it and make it a meal in itself. I enjoyed this as a light lunch. Recommend serving this with my fennel seed flatbreads which will compliment the flavours here wonderfully.

Cooking instructions

* Step 1

Make the hummus by adding all of the ingredients EXCEPT the ice cube into a food processor or blender until smooth then add in the cube and blend again until it's completely melted and the hummus is even silkier with no lumps. Transfer to your serving dish and set aside.

* Step 2

Heat up a small skillet or pan and heat over a low heat. Add the 1/2 olive oil then the garlic clove and sliced shallots. Stir through to coat in the oil. Fry until the shallots are beautifully golden and buttery soft. Discard the clove of garlic and add the shallots onto the top of the hummus.

* Step 3

Using a kitchen towel/cloth remove any access oil from the pan then add in the pine nuts to toast. Once lightly golden, add to the hummus.

* Step 4

Finally add the chopped anchovies, fresh parsley leaves and 2tsp extra virgin olive oil (I used the oil from the anchovies). Serve up and enjoy! :)
