BBQ Dry Rub
This is a recipe for my BBQ dry rub. This works fantastically on most meats. Simply mix together, massage it well into your chosen meat then leave to marinate for a few hours to get that flavour in. I then like to baste the meat on my BBQ sauce to finish (please see my other recipe for 'Spicy & Smoky BBQ sauce').

for 1 kg meat

Cooking instructions
* Step 1
Add the black pepper corns and corriander seeds to a mortar and pestle and crush then grind then up into a coarse powder.
* Step 2
Add them into a bowl along with the brown sugar and mix. Next add in all the remaining ingredients a d mix together well.
* Step 3
Rub well into your chosen meat and get it completely covered all over then place on a plate or tray and leave to marinate for at least two hours or ideally overnight to allow the flavours to absorb into the meat.
* Step 4
Next you can cook it at leave as it is or baste in BBQ sauce to finish. See my BBQ sauce recipe if you'd like to try it out.
