Chicken mushroom wild rice

Cooking instructions

* Step 1

Heat the olive oil over medium heat in a large pan or Dutch oven

* Step 2

Add the onion and carrots, cook until onions begin to soften

* Step 3

Add the garlic and mushrooms and cook for 5 minutes

* Step 4

Add the spices and cook an additional 2-3 minutes

* Step 5

Add the starch and mix to cover the veg

* Step 6

Add the nutritional yeast and mix well

* Step 7

Add the chicken broth

* Step 8

Add the wild rice and chicken

* Step 9

Bring to a boil, then reduce heat and simmer for 55 minutes

* Step 10

Add the coconut milk and shredded kale at the end, heat long enough for the kale to wilt slightly
