Slow Roasted Tomatoes.

These tomatoes are so yummy and go with so much! On their own as a snack, served with drinks and olives etc, in sandwiches, salads, as a side, in dishes...the options are endless! So simple to make and easy to pop in when you have the oven on for a slow roast anyway. ☺

Cooking instructions

* Step 1

Preheat oven to 150°C

* Step 2

Chop your tomatoes. Halves for cherry tomatoes, quarter or eighths for larger varieties.

* Step 3

If using garlic, smash slightly with the side of your knife (carefully)! No need to peel the cloves.

* Step 4

Put it all in a roasting tin, and drizzle with a little oil.

* Step 5

Season with salt and pepper.

* Step 6

Roast for 2 hours.

* Step 7

Enjoy hot or cold. ☺
