Chicken couscous salad

Easy meal with loads of vegetables and yummy chicken. I love this as you can add almost any vegetables you prefer #salad #heartfood

Ingredient

Food ration :

8 servings
250 ml

couscous

400 g (1 can)

chickpeas in brine

As needed

oil, olive

100 g

cucumber

Cooking instructions

* Step 1

Add couscous and hot stock in bowl. Cover with cling wrap or lid and leave for 5-10 minutes.

* Step 2

Drain chickpeas. Toast in 180°C oven for 5-10 minutes. Drizzle with olive oil after toasting and add to couscous.

* Step 3

Cut tomatoes lengthwise in quarters. Add to couscous.

* Step 4

Slice cucumber in quarters. Add to couscous.

* Step 5

Chiffonade cabbage. Add to couscous.

* Step 6

Shred chicken with hands or fork in small pieces. Add to couscous.

* Step 7

Drizzle olive oil and balsamic vinegar for dressing

* Step 8

Season with salt and pepper
