Apricot French Toast Roll Ups

#morningbreakfast Easy to make and fun to eat, these delicious french toast roll ups are a creative breakfast treat for any day of the week!

Cooking instructions

* Step 1

Cut the crusts from the bread slices and flatten the bread slices using a rolling pin. Spread the apricot jam on one side of each slice. Sprinkle the chopped apricots along the bottom of each bread slice. Roll the bread tightly. Continue for the remaining slices. In a bowl, mix the eggs, vanilla extract and milk.

* Step 2

Melt butter in a pan. Dip each roll into the egg mixture, shake off the excess, and place in the pan. Do not overcrowd the pan. Cook until they turn golden brown on each side. Remove from pan and roll them in brown sugar, coating on all sides. Serve the roll ups with sliced fresh apricots!
