Khaman Dhokla

Cooking instructions
* Step 1
In a bowl take 3/4cup water,add lemon juice,sugar and salt.Mix well,add ginger and green chillies also.and keep aside for 5 minutes.
* Step 2
In a bowl sieve besan.Add lemon -sugar water gradually to the besan.Prepare a smooth batter.Cover and keep aside for 10 minutes.
* Step 3
Meanwhile prepare waterbath/steamer for steaming dhoklas.
* Step 4
Add baking powder and baking soda to the batter,mix well.If required add some water to make a batter of dropping consistency.Transfer to a mould.
* Step 5
Steam for 10-15 minutes.Check with a tooth pick.
* Step 6
Put off flame and leave for 10 minutes inside the steamer.
* Step 8
Mmeanwhile preparing tampering,heat oil.Add mustard seeds,curry leaves and green chillies.When mustard seeds crackle,put off the flame.When cool down,add 1 cup water,lemon juice and sugar.Mix.
* Step 9
Cut dhoklas into pieces,put in a tray.Now warm the tampering water and pour over dhoklas.Leave for 5 minutes.
