Another Avocado Appetiser

We had this on its own for brunch today but it’s also an easy starter for a full meal, in which case use four, rather than two, slices of toast but trim off the crusts and generally make them look a little more delicate. Amend ingredient quantities to suit your palate and omit the chilli of that’s not to your liking: it’ll still taste good.

Ingredient

Food ration :

2 lunch/4 starter servings

Cooking time :

8-10 minutes including prep
1 tsp

paprika

Cooking instructions

* Step 1

Mash the avocados in a bowl, then stir in the garlic, paprika, chilli and lime juice.

* Step 2

Add the prawns and gently stir. Season to taste.

* Step 3

Gently spread the mixture over the toast and top up with tomato slices. Sprinkle the coriander on top and serve.
