Spicy baigan bharta

Baigan ka bharta is a vegetarian dish prepared by mashing eggplant that is grilled over heat.i made it with the spicy ingredients that make more yummy in taste.

Cooking instructions
* Step 1
First, dry roast the baigan,and tomato in a gas or oven as per your choice.untill the tomato and baigan is tenderly cooked from inside. Peel the skin of a tomato,and baigan,and mashed both the tomato, and baigan,properly.to stir fry along with the masala.
* Step 2
Meanwhile,prepare the other ingredients,like jeera seeds, and dhania powder,red chilli powder,garam masala powder.and onion finely sliced.
* Step 3
Next,heat the oil in a pan fry bay leaf,crackle the jeera seeds.and mince garlic,add chopped green chilli and stir for a min.
* Step 4
Next,add all the spices given,and add the mashed tomato, and baigan.and mix properly.and cook for few min,till it done and cook in a medium heat. Add salt as per taste. Cook for 7 to 8 min.
* Step 5
Make a pot shape of baigan.and Season it with red chillies flakes,and onion leaves,on the top of the baigan bharta.serve hot with roti,or rice.
