Garlic Soup سوپ سیر
This is a delicious and comforting garlic soup. You can prepare this soup in half an hour. Amazingly, garlic taste, is not as you expect, and actually is pretty nice and not annoying. Garlic or as we say in Farsi : seer سیر is amazing for it’s medicinal benefits and for it’s flavour. I know people who swallowing raw garlic every day for it’s medical effects.

Cooking instructions
* Step 2
Break the bread into small pieces. Heat some olive oil in a pot and add pieces of bread, stir until look golden brown and set aside. Also, you can toast slices of bread in preheated oven at 170C degree for 10 minutes.
* Step 3
Peel off garlic cloves skin and cook them in boiled water (blanch) until soft. (It will take about 6-7 minutes). Also, you can fry sliced garlic until barely golden, instead of boiling them but if you fry them, the taste of garlic will be very strong (I personally do not like that). Then remove from the water. Use a masher or a fork and crush them.
* Step 4
Add 6 cups of water and 2 vegetable/chicken stocks to a pot and bring it to a boil. Next, add 2tbsp butter, crushed garlic, dijon mustard, season with salt, pepper, paprika, dried sage, and toasted or fried bread slices to the mixture.
* Step 5
Give a good stir. Raise heat to a high and bring it to a boil. Then, reduce the heat and allow to cook to about 15 minutes. Due to adding bread slices, this soup start to get thick, so adjust with more chicken or vegetabl stock as needed.
* Step 6
After 15 minutes, crack two eggs, and add them to the soup. Stirring as you added them. Cover the pot and let eggs cook in steaming soup for 5-6 minutes.
Our soup is ready. Serve it with some freshly chopped parsley.
