California Farm Skillet Fried Artichokes
You can trim and quarter artichokes and panfry them to make a tasty dinner that rivals any meat dish.

* Step 1
Prepare the cheese sauce: grate the nutmeg, grate the cheeses, melt with milk and ground nutmeg in cast iron sauce pan on low. Get ready to boil and whip when artichokes are ready.
* Step 2
Trim the top and stems of the artichokes flat, trim the ends of the outerleaves with scissors, quarter the artichokes, remove the center artichoke hairs, rub olive oil on artichoke to prevent discoloration.
* Step 3
Lay in medium hot skillet, fry flat till golden about 5 minutes per side, then brown outside leaves till artichoke juice runs out. Add cup of wine or water, lid on. Done when bottom outer leaf pulls off easy, about 30 minutes.
* Step 4
Whip cheese sauce till stiff with Tbs sherry wine and eggwhite. Place artichokes in soupbowl, drizzle cheese sauce over. Serve with warm bread baguettes. Enjoy. Leftover leaves compost well in wormbin.
