California Farm Single Portion Fruit Pies
Three picky eater grandkids, three different favorite fruit pies… here is an super easy way to bake three, four different individual fruit pies from scratch in an hour. I use my tortilla press and 4” diameter spring cake forms. And I microwave the fruits and raisin fillings to stuff more fruit into each pie, and drain the precooked fruits to keep the crust from getting soggy.

* Step 1
Bake pie shell. Knead all-purpose flour, sugar, butter, egg, lemon juice, spices into smooth ball. Wrap in shrink wrap, rest 15 minutes. Divide in five parts, press in tortilla press. Keep one dough ball to make lattice tops later. Cover bottom and sides. Bake at 400F degrees till solid, about ten minutes, take out of oven, cool.
* Step 2
Make filling. Warm the cup of milk, mix with 3 egg yokes, Tbs sugar, tsp vanilla, tsp cinnamon, heat slowly. When thickened, add Tbs cornstarch dissolved in Tbs cold water. Rub Tsp lemon or orange marmelade on bottom of pies for extra flavor burst. Fill each pie with quarter of filling. Precook cup of fruit in microwave, mix WithTbs soaked, raisins, drain fruit well, then put on top of filling in each individual pie. Below are cranberries, fresh pineapple and Granny Smith apple with raisin
* Step 3
Make lattice top. Make thin strips of dought, weave over fruit filling, tuck ends into pie sides. Brush lattice with whipped egg white. Bake 30 minutes at 400F degrees. Serve with whipped cream. Enjoy.
