Cooking instructions
* Step 1
Pressure cook the dal with onion and haldi till 1 whistle. Then simmer it for 2 more whistles.
* Step 2
Clean and boil the tamarind in water for 2 minutes. Then squeeze it and remove all the juice.
* Step 3
Add brinjals to the tamarind juice and cook on medium heat. Add salt, jaggery, hing / asafoetida. Grind the tomatoes with the sambar powder.
* Step 4
After cooking the vegetable for 10 minutes, add the tomatoes paste and boil for another 5 minutes.
* Step 5
Mash the Dal with a ladle. Add it to the tamarind vegetable mixture. Boil for another 2 minutes. Check and adjust the salt and chilli powder. Adjust the consistency by adding water as needed.
* Step 6
Add a tadka of mustard seeds, jeera, dry red chilli and methi seeds. I use coconut oil for tadka here. You can use your preferred oil. Garnish with chopped coriander leaves and curry leaves. Awesome sambhar is ready.
