Baked Panko, Bread Crumb crusted zucchini
I made the original recipe, found here by AuntyJ, but made it my own way.

Cooking instructions
* Step 1
Peel the zucchini & cut into small wedges. Mix a few eggs in a bowl and then in another bowl, mix bread crumbs, panko, salt, and pepper.
* Step 2
Dip each zucchini wedge in the egg and then in the mix. Lay them out on a baking sheet and bake at 350 degrees for 20-30 minutes. Depending on how big the slices are, will depend on cook time. If fork goes smoothly through middle, they’re done
