Garlic and Chile Shrimp Linguine
A recipe a wonderful friend gave me long ago that she serves in her restaurant 😊

Cooking instructions
* Step 1
Fill a large pot with water and bring to a boil. Once boiling add a few pinches of salt. Place your pasta into water. Loosen properly and cook according to package directions subtracting 1-2 minutes as it will finish cooking in the pan.
* Step 2
Slice the chili thinly keeping the seeds if you prefer spicy hot. Slice garlic into razor thin slices. Set aside. Ensure your shrimp/prawns are gutted and cleaned. Slice in half lengthwise. Set aside.
* Step 3
Place a large pan on high heat, add oil, thinly sliced chilies, and garlic. Lightly sweat for 30 seconds, add the shrimp and sear each side. Add grated lemon zest. Deglaze pan with white wine. Season with salt and pepper to taste.
* Step 4
Add the baby spinach. Turn heat down to low. Add the parsley. Mix or toss til evenly distributed and serve immediately on warm plates. Arrange some of the shrimp on top of the pasta. Drizzle with a little bit of olive oil over top of shrimp and pasta. Enjoy 😋.
