Superhot Fermented Chilli Sauce

I decided to order a superhot chilli plug (Death Spiral), so thought I had better do something with the chillis. Too hot for me, but many seem to like superhot sauces (unless they are just being macho).

Ingredient

175 g

superhot chilies

150 g

hot chilli (e.g. scotch bonnet, Thai, serrano or habenero)

25 g

garlic

300 g

sweet pepper (red or orange)

1 litre

3% brine

2 tsp

smoked paprika

1 tsp

black peppercorns

1 cup

brine saved from ferment

1-3 tbsp

cider vinegar (unpasteurised, unfiltered)

1 tbsp

honey

1/2 tsp

xanthan gum

medium onion
