Cooking instructions
* Step 1
Preheat oven to 200. Cut eggplant into halves. Season with salt and drizzle with olive oil and bake for 30 minutes.
* Step 2
In a blender blend pepper, tomato and parsley and fry on medium heat. Once cooked add cheese and set aside.
* Step 3
Remove eggplants from oven and mash the Centre with a fork. Remove mashed and mix with pepper mixture. Stuff holes with filling and bake for further 30 minutes. Enjoy.
