Tomato Fish Stew

Tomato Fish Stew

Fish in a lot of tomatoes. 😍. It Doesn’t get better than this. I blended fresh tomatoes but you can use 2 cans if you have.

Cooking instructions

* Step 1

On medium heat fry onion, carrots and mixed herbs for 5 minutes. Add habanero chilli. Mince garlic and ginger in mortar and pestle and add to onions and cook till fragrant.

* Step 2

Add slightly blended tomatoes bring to boil and simmer for 15 minutes till the ingredients have married and reduced. Place fish skin side down, cover and simmer for 5-10 minutes depending on thickness of the fillets.

* Step 3

Once cooked, remove from heat, season with salt and pepper, add parsley and serve hot.
