Tutti Frutti Custard Cookies

Cooking instructions
* Step 1
Cream butter and sugar in a large bowl till pale in colour with hand held mixer. Add lemon essence. Give it a quick whisk.
* Step 2
Combine flour, custard powder, cardamom powder, tutti frutti, and salt. Mix well.
* Step 3
Add flour mixture to the creamed butter in 3 parts, whisking after each addition.
* Step 4
Bring the dough together and roll it in a log shape.
* Step 5
Wrap it in a cling film tying the two ends thoroughly and refrigerate for at least 2 hours.
* Step 6
Preheat oven to 350 deg F. Line a baking tray with oven proof parchment paper.
* Step 7
Unwrap the dough and cut it in 24 equal sized squares.
* Step 8
Place them on the tray leaving a small gap between them.
* Step 9
Bake for 20 minutes flipping the cookies midway through baking time.
* Step 10
Remove from oven and cool them thoroughly. Once cooled, they will harden.
