Saffron (cheaters) risotto

Saffron (cheaters) risotto

I cannot afford real saffron but this recipe looks like $30 a plate and costs 50cents

Ingredient

1/2 cup

risotto rice

1 table spoon

butter

1 table spoon

oil

Cooking instructions

* Step 1

Put the oil in a pan and fry the onion until soft NOT brown. About 4 mins. Then add the minced garlic for 1 min

* Step 2

Add the butter and then the rice and lower the heat so that all the rice is coated in the oily onion mix

* Step 3

In a separate pan heat the chicken stock (you can use 2 cubes and water but buying bones and making your own is worth the effort)

* Step 4

Turn up the heat in the rice and add a ladle full of chicken stock (about 20%) allow all the liquid to absorb

* Step 5

Repeat adding the stock 20% at a time (so 5 times) each time stir until all the liquid is absorbed

* Step 6

With the final chicken stock add the yellow food colouring, lots of black pepper, salt to taste and cheese if using - when all the liquid has nearly gone remove from heat and serve. Waiting 2-3 mins.

* Step 7

I add a little salt and Thyme on the side.
