Zanzibar vegetarian pizza πŸ•πŸ…

This recipe is found on islands of Zanzibar (Tanzania), I have twisted this recipe into vegetarian but originally it's made with meat & eggs.

Cooking instructions

* Step 1

For dough: combine plain flour, salt πŸ§‚, oil, cumin seeds / onion seeds πŸ§… mix gently, add water little by little, when dough is formed, cover and set aside for 30 mins.

* Step 2

Wash and clean potatoes πŸ₯”, boil them, check with a knife, when soft, remove from flame, let it cool completely, peel and grate / use potato masher, mash well, keep aside. Cut & shredded red cabbage keep aside, chopped onions πŸ§…, tomatoes πŸ…, green chillies, parsley, coriander leaves, keep aside.

* Step 3

Heat oil, add cumin seeds, when start to crackle, add finely chopped onions πŸ§…, stir, add finely chopped green chillies mix well, add chopped tomatoes πŸ…, black salt, salt πŸ§‚ mix well, cook for 2 mins.

* Step 4

Add finely chopped parsley, finely chopped coriander leaves, kashmiri red chillies powder 🌢️, coriander & cumin powder, turmeric powder, mix well, add mashed potatoes πŸ₯” mix well, cook for 1 min, add red cabbage shredded mix well, cook for 2 mins.

* Step 5

Add Chaat masala, dry mango powder πŸ₯­, mix well, remove from flame, let it cool down, finally add finely chopped coriander leaves, green chillies chopped mix well.

* Step 6

Heat non- stick frying pan, make equal size balls(small balls), flatten ball with your hand βœ‹/ use rolling pin & board,dust little dry wheat flour, make 5" diameter round circle (chappati) add filling in the centre, spread the filling, leave the sides, fold the sides well, pick up gently and drop it on hot frying pan, cook for 2 mins on medium flame, add 1/2 tsp of oil, butter, ghee, spread well, cook one side until golden, turn and cook another side the same way.

* Step 7

When both sides are cooked,use the same method to complete all the balls remove from flame, serve hot with tomato ketchup πŸ…, garnish with finely chopped coriander leaves, finely chopped green chillies.
