Rice Vermicelli Salad with Fish Sauce Dressing

There are some foods that I crave when weather is getting warm. ‘Sushi’ is one of them, and ‘South East Asian flavoured Salad’ is another. This Rice Noodle Salad with Fish Sauce Dressing is perfect for the craving. Today I added Prawns, but Chicken is also good.

Cooking instructions

* Step 1

Combine all the Dressing ingredients in a small bowl. Alter the amount of Fish Sauce and Sugar to suit your taste.

* Step 2

Cook Rice Vermicelli in boiling water as instructed, rinse in cold water, then drain well. Cut OR tear if too long. *Note: Prawns (OR Chicken) can be cooked with Rice Vermicelli.

* Step 3

Cut all Vegetables into thin strips, place into a large mixing bowl, add all other ingredients and the Dressing, and mix to combine. Add some Coriander Leaves on top and serve immediately.
