‘Mlyntsi’ Ukrainian Thin Pancakes
Many counties have their own traditional thin Pancakes. France’s Crepes are probably the most famous ones. Ukraine’s thin Pancakes are called ‘Mlyntsi’. Similar to France’s Crepes, ‘Mlyntsi’ can be sweet or savoury. I tried a few recipes that I found on the internet, but most of them require too much Salt. I reduced the amount of Salt, increased the amount of Milk, and here is my ‘Mlyntsi’ recipe. The texture is similar to Japan’s ‘Chinbing’.

8 x 18cm Pancakes
Cooking instructions
* Step 1
Combine Flour, Salt and Sugar in a mixing bowl. Add Milk, Egg and melted Butter, and use a whisk to mix well until smooth and well combined.
* Step 2
Heat a frying pan, non-stick preferred, over medium heat, lightly oil the pan, ladle the batter, and form a thin pancake in the size of your choice, using the bottom of the ladle to spread the batter if required.
* Step 3
Cook until bubbles appeared on the surface, flip it over, and cook the other side. Serve with your favourite fillings and toppings.
*Note: Today I wrapped Cottage Cheese and Blueberries, and served with Blueberry Sauce.
