Tofu & Enoki Clear Soup

Tofu & Enoki Clear Soup

Enoki can be replaced with Shiitake, Shimeji, Oyster Mushrooms OR other Asian mushrooms. You may wish to add some Eggs.

Ingredient

Food ration :

4 servings
1 teaspoon

Salt

1 tablespoon

Soy Sauce

100-200 g

Enoki

Cooking instructions

* Step 1

Cut Tofu and Enoki into small pieces.

* Step 2

Bring Dashi Stock to the boil in a large saucepan. *Note: Use about 2 teaspoons Dashi Powder for 4 cups Water OR according to the instruction on the package.

* Step 3

Season with Salt and Soy Sauce. Then add Enoki and Tofu, bring back to the boil.

* Step 4

Add chopped Spring Onion and enjoy.
