Autumn Vegetable & Roasted Squash Soup 🌱

Inspired by the Cookpad IG live a moment ago and feeling bored as I’m waiting for someone to join my zoom call, here is my recipe for roasted squash soup! This uses the veg skins so I’ve included it for #Cookeverypart

Ingredient

Cooking time :

1 hour
3 cups

veg stock

Cooking instructions

* Step 1

First prepare your lentils. Some lentils require soaking or pre-cooking as they take longer to cook than the soup.

* Step 2

Wash your veg well. Roast your squash, onions and any other root veggies you are using. I roasted at 220 for about 35 minutes until my squash were soft.

* Step 3

Combine ingredients in a soup maker or soup pot, simmer with the stock and blend. Lovely with sourdough or (see my) croutons.
