Wrap eggplant with allumunum foil.Cook in the oven for 30 mins at 250c.

* Step 2

Remove from oven,unwrapped it.Then.peel off the skin.

* Step 3

Use fork to flatten.Set aside.

* Step 4

In a bowl crack egg then add bell pepper,spring onion,salt,chicken.powder.Beat well

* Step 5

Pour over the eggplant.

* Step 6

Heat pan add oil then fry it.
