Make Your Own - Hamburger Helper

Cooking instructions

* Step 1

Brown the meat and onion (sausage or ground turkey is another option)

* Step 2

Drain the meat by rinsing in a colander with hot water then return to pan.

* Step 3

LASAGNA STYLE: Add 1 jar spaghetti sauce. Add garlic and Italian seasoning to taste.

* Step 4

CHEESEBURGER STYLE: Put 1 cup beef broth in a cup. Add a spoonful of flour or cornstarch. Flour will give you a brown gravy, cornstarch will give you a translucent sauce. Alternately, you can use a package of brown gravy mix. Mix together with the cup of broth. Add to the meat in the skillet and bring to a boil.

* Step 5

TACO STYLE: Drain 1 can of diced tomatoes into a measuring cup (15 oz. size). Add beef broth to 1 cup and flour. Dump all into skillet with meat. Add garlic and cumin and a spoonful or two of salsa if desired. Bring to a boil. If you need to stretch this recipe, you can add a can of corn and/or pinto beans. Use the bean juice and corn water from the can instead of adding water.

* Step 6

STROGANOFF STYLE: Make this like the cheeseburger style, using milk instead of broth. Or use 1/3 cup dried milk powder mixed into 1 c. broth. Or, you can add in canned mushrooms; drain into a measuring cup and add milk to make a cup. Put a dash of Worcestershire sauce in desired.

* Step 7

Bring meat and sauce to a boil, stirring often. (For stroganoff, make it a gentle simmer -- don't want to have burned milk taste!)

* Step 8

Add the noodles and stir them in. Add more water if needed, so the noodle mix well into the sauce. (Note: It should not cover the noodles. You are not making soup. Just enough water so that you can mix the noodles in easily without a lot of clumping)

* Step 9

Cover and continue to simmer, tirring often, until the noodles are soft (15 minutes or so for 16 oz. of noodles.)

* Step 10

Now ... top it off ...

LASAGNA STYLE: Turn off the stove and stir in some ricotta or cottage cheese, or just sprinkle shredded mozzarella on top. Serve.

* Step 12

CHEESEBURGER STYLE: Reduce heat to low, add a handful of cheddar cheese, and stir it in until it melts. Turn stove off, sprinkle more cheese on top, and serve.

* Step 13

TACO STYLE: Turn off stove, top with cheese - Monterey Jack, pepper jack, or queso fresco are good choices. Servce.

* Step 14

STROGANOFF STYLE: Reduce heat to very low. Add a couple of big spoonfuls of sour cream and stir into mixture. Cook gently until heated trough - do not boil! You can use non-fat plain yogurt as well, but it has a more acidic tase so it won't taste like true stroganoff.
