Eggless oat and cereal cookies
I decided to make some healthy cookies for the husband as he often buys his from the supermarket. I often find that they are slightly burnt or too hard as they get left on the shelf for a few days.
Cooking instructions
* Step 1
Preheat the oven to 177 degrees. Line a baking tray with parchment paper or use a silicone mat.
* Step 2
In a mixing bowl using an electric hand whisk, beat together the softened butter with the sugars (caster and brown) and vanilla extract. Beat for roughly 1 to 2 minutes, until the mixture becomes creamy and well incorporated.
* Step 3
Now add the plain flour, oats, crisp cereal clusters with raisins, cinnamon and baking soda. Using the electric hand whisk again mix all of the ingredients.
* Step 4
Add water and oil and mix together using a silicone spatula to bind all of the ingredients together. Either using an ice cream scoop or spoon, scoop some of the cookie mixture and place it on the baking tray. Give enough space between each one as the dough will expand and rise during the cooking process. Flatten them slightlyusing your hand. Bake the cookies for 9-11 minutes. Keep a watch depending on the size it may take shorter or longer to bake.
* Step 5
Once the cookies are baked, remove from the oven and leave to cook on the baking tray for 5-8 minutes. Then transfer the cookies onto a cooling rack and let them cool completely.
* Step 6
When ready to eat serve on a plate or transfer cookies into an airtight container or jar to store them. The cookies should be eaten within a few days.
