Chancho en Piedra 🇨🇱
A Chilean sauce, perfect for empanadas. It cools down the empanadas and adds some extra freshness to it. #mycookbook #chile #empanadas #sauce
Cooking instructions
* Step 1
In a pestle & mortar (or a small electric mixer), add the salt, the black pepper and the garlic. Mash it until you have made a paste. Add the yellow pepper and mash it all together until you have made a coarse paste.
* Step 2
Add a handful of your chopped tomatoes to the pestle and mortar for some extra juiciness and mash it all together.
* Step 3
In a serving dish, add the tomatoes, the paste you made and the coriander. Mix it well and add the sunflower oil. Try it and adjust the salt if you think it is necessary.
* Step 4
If you like some spiciness, you can add some chili sauce from a jar or fresh chili, it's up to you. When you cut your empanada in half, stuff one half with a spoonful of chancho en piedra and be happy! :) Enjoy!
