Mom's pork roast and potatoes

my mom got this recipe out of a McCall's cooking school magazine back in the 80's " It has always been a family favorite"

Ingredient

2 hour  to 2 1/2 hours
1 clove

garlic

1 1/2 tsp

dried thyme

1/4 tsp

pepper

1 1/2 tsp

salt

Cooking instructions

* Step 1

Preheat oven to 425f. wipe pork with damp paper towel. Rub outside of pork with cut sides of garlic. Combine 1 1/2 tsp of salt, thyme, bay leaf and 1/4 tsp pepper, rub all over the pork to coat it well. Insert garlic slivers into the pork roast.

* Step 2

Place pork, fat side up, in a large shallow roasting pan, without rack. Place onion, carrot under the roast uncovered for 1 hour. Then remove pork from roasting pan.

* Step 3

Pour off most off the fat leave about 1T in the roasting pan. Stir flour into the drippings in the pan. Over low heat, stir several minutes to brown the flour. Gradually stir in 1 cup chicken broth into the flour mixture until well combined. Then stir in 3/4 cup water

* Step 4

Bring to a boil, reduce heat and simmer stirring to dissolve the brown bits for about 2 minutes, or until the gravy is thickened and nicely browned. Strain gravy through a sieve into a sauce pan Set aside until later. Return the pork back to the roasting pan.

* Step 5

Gently toss the sliced potatoes, chopped onion, 1 T parsley, the salt and pepper, to mix well. Arrange around the roast. Pour the remaining chicken broth over the potatoes. Brush with the melted butter. Reduce the heat of oven to 400F. Place back into the oven.

* Step 6

Roast the pork45 minutes to 1 hour longer or until meat thermometer registers 170F and the potatoes are fork tender and nicely browned. Sprinkle the potatoes with chopped parsley. Serve pork and the potatoes right from the pan. Reheat the gravy to serve with roast and potatoes.
