Babat Goreng (Fried Tripe With Chillie Sambal)

Easy, simple, and yummy. Babat or Tripe is also a popular ingredient for Soto or other stir fry dishes in Indonesia. You may take a look at my recipe of Indonesian Beef Tripe Soup (Soto Babat) that's so delicious and yummy πŸ˜‹

Cooking instructions

* Step 1

Boil water, add tripe, salt, bay leaves, and lemongrass, boil until tender.

* Step 2

Then cut the tripe according to taste, set aside. Grind the shallots, garlic, turmeric, galangal, ginger, candlenuts, coriander and water

* Step 3

Prepare a pan, add ground spices, and add tamarind, lemongrass, lime leaves, bay leaves, one litre of water, salt, brown sugar, and powdered broth Cook until boiling.

* Step 4

After boiling, add the tripe pieces, stir well, and cook until completely reduced, removed, and drained.

* Step 5

Fried beef tripe until cooked, drain.

* Step 6

Prepare red bird's eye chilies, shallots, garlic, salt, sugar and micin.

* Step 7

Grind fresh chilli sauce, then pour in the remaining cooking oil from frying the beef tripe, stir well, and set aside
