Green Bean Compote, Jackfruit, Banana and Sugar Palm Fruit

Kolak (or kolek) is an Indonesian dessert based on palm sugar or coconut sugar, coconut milk, and pandanus leaf . A variation in which banana is added, is called kolak pisang or banana kolak. Other variations may add ingredients such as pumpkins, sweet potatoes, jackfruit, plantains, cassava, rice balls, sugar palm fruit, green bean and tapioca pearls. It is usually served warm or at room temperature. And in Indonesia, kolak is a popular iftar dish during the holy month of Ramadan.

Cooking instructions

* Step 1

Provide a pot, pour water together with brown sugar. Boiled until boiling. When the sugar has melted, remove and filter the water, pour the filtered brown sugar water and place it in the pot again, add the green beans and boil until it boils, then turn off the heat and let it simmer for about 10 minutes then boil again until it boils and the green beans are cooked.

* Step 2

Then put the pandanus leaves and banana in it. Boil for about 5 minutes Pour all the coconut milk slowly.

* Step 3

When it is warm, add the kaling and jackfruit. Boil over medium heat to cook it and while stirring, do not let the coconut milk crack and clot, cook until it boils. If it feels right and cooked, remove and serve while warm.
