Cooking instructions
* Step 1
prepare the grill cut aubergine in half I have two medium-sized oil well (thank you Pallu22 for this suggestion) lay on grill find the cooler spots on grill to do this cook cut side down first then the peeling side last after they are grilled hollow out the aubergine discard the peelings keep the pulp coarse not mush and not huge chunks
* Step 2
put the three tablespoon of oil in a big frying pan add cumin garlic after a bit add the aubergine pulp tomatoes salt turmeric, stir well then simmer covered 10 minutes if it sticks add 2 tablespoon of water and stir
* Step 3
add the coriander and ground cumin and simmer 3 minutes add onions chilies garam masala remove from heat stir keep covered 5 minutes
