Creamy, dreamy gnoochi soup with chicken

I adore gnoochi and the chicken thighs adds a richer flavor. It really is a dreamy, creamy soup!

Ingredient

butter

1/4 cup

flour

1 tbsp

olive oil

1 stalk

celery,diced

1 tsp

thyme

1/4 tsp

nutmeg

1 lb

gnoochi

1 tbsp

salt

Cooking instructions

* Step 1

In large saute pan,heat up oil and butter over medium heat.

* Step 2

Add onions, celery, carrots and saute until onion is translucent.

* Step 3

Add in all the spices and cook an additional minute.

* Step 4

Stir in flour and cook three minutes to take out that raw flour taste. Whisk in chicken stock making sure flour doesn't get lumpy.

* Step 5

Add in chicken and gnoochi.Reduce heat to a medium low and simmer fifteen minutes.

* Step 6

Add spinach and stir. Then add cream cooking until cream gets heated.

* Step 7

If soup needs thickening, make a slurry of equal parts water and flour. mix well, add to a low boiling soup.

* Step 8

Serve and enjoy!
