Crispy Hasselback Potatoes

These Crispy Hasselback Potatoes turns out crispy on the outside and tender on the inside. An easy side dish that pairs perfectly with chicken, beef, or any green salad!

Cooking instructions

* Step 1

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or silicon mat. Set aside. Wash, scrub and let the potatoes dry completely.

TO FAN OUT: Place the potato lengthwise between the handles of 2 wooden spoons or 2 chopsticks. Slice the potato into thin slices 1/8-inch thick, cutting down to the chop stick or wooden spoon; the spoon handles will prevent you from slicing the potato all the way through. Repeat with the remaining potatoes.

FOR GARLIC MIXTURE: Stir together fresh thyme leaves, minced garlic, olive oil, and some salt and pepper in a small bowl.

Place potatoes into large ziplock bag along with garlic mixture. Give a gently massage so all potatoes are coated in mixture, making sure to get in between all the slices. (Be careful not to break potatoes).

* Step 5

ROASTING: Arrange the potatoes cut-side up on a baking sheet with little spacing in between. Bake until 50-60 minutes or until golden brown and crisp. Sprinkle potatoes with parmesan cheese the last 10 minutes of baking. Place the potatoes on a serving platter. Sprinkle with parmesan and extra dill. Enjoy!
